How To Make Green Noodle




Ingredients:

10 pieces green vegetable(sawi)

50 ml water

250 gram high protein flour

1 egg

Method:

1.Cut green vegetables.Blend with water in a blender to obtain 50ml juice.

2. Mix the flour,egg and juice to form a dough.

3.Roll out the dough until you reach the thinness you want.If it gets too sticky put on some flour.

4.Cut into strips with a sharp knife.




1.  To enjoy the noodle,boil a small pot of water and when it's boiling,dung the green noodle in for about 4-5 secs.

2.  Heat up oil in wok and saute shallots/red onions.Dish out into a serving bowl with 1tbsp soya sauce,1tbsp vinegar,pinch of salt.

3.Garnish with some green vegetables or add some prawns.

Apple Cider Vinegar-Detox drink


Took this from a website.I'm writing it down here in case I forgot.I had a bottle of apple cider sitting on the table top bought not long ago by hubby.

1 tbsps apple cider vinegar

1 cup warm water

2 tbsps squeezed lemon

pinch of crush ginger

1 tbsps raw honey

Method:

Mix all ingredients. Drink before you go to bed every night.

Moist OrangeChocohorlick Indulgence

My morning treat with this chocolate cake that is mixed with horlick and orange that I made last night...and what's best is everything just mixed together and bring to bake.Simple as that...




 The only thing is my cocoa powder is not dark enough.Use a dark cocoa powder so that the cake will look darker and nice.

Ingredients:

4 eggs

300g butter

360g fine granulated sugar

400ml evaporated milk

2 tsps vanilla essence

200g all purpose flour

50g cocoa powder

30g horlick powder

1tsp baking soda

1 tsp baking powder

1 tbsp orange juice

Method:

Put everything together in the mixing bowl and mix till fine and smooth.

Bake in the pre-heated oven 190°C for about 1 hour or until done.

Jam Swirl Bread With Oats





Yesterday I was trying to make soft bread again by using the same recipe of chocolate swirl bread,recipe of Goh Ngai Leng : https://www.youtube.com/watch?v=ERcdHj_QxlI
but I ended up what I called "Jam Swirl Bread" instead of "Chocolate Swirl Bread",and I
sprinkle some oats on the top of the bread.I had a nice bread this morning and everyone love it.



Why jam and not chocolate?Because I was too lazy to split up 2/3 to make the chocolate dough,so I think of a simple method.
I will just use the jam to spread on the dough without having to cut out 2/3 to knead with chocolate powder which is very yakki to my hands.No hand gloves at home.
Sprinkling some oats on the top of the bread adds up to a nice sweet bread in the morning with a cup of warm milk.

Ingredients:


Ingredients:

150g fresh milk
20g condensed milk
20g unsalted butter(salted can do as well)
25g beaten egg
30g sugar
1/4 tsp salt
225g bread flour
25g cake flour
3/4 tsp instant dry yeast

Method:

Method:

Keep warm 150g fresh milk,20g condensed milk and 20g unsalted butter in the rice cooker for 10 mins.I warm my one in the oven.

Pour butter and milk mixture into the bread pan.Add 25g beaten egg.Add 30g sugar and 1/4 tsp salt.Add 225g bread flour and 25g cake flour.

Dig a small hole,pour in 3/4 tsp instant yeast.

Select dough program and press start.Rest the dough for 20 minutes.

Sprinkle some flour on the table.Flaten the dough and roll it long.Spread some jam on it.
Roll up like you roll a swiss roll cake.Make sure the dough is the length of the bread maker.

Put the dough back into the bread pan.Cover.Let the dough rest for 40 minutes until it has double in size.Brush the top with beaten egg and sprinkle some oats on it.

Press bake function and bake for 35 minutes.

Kueh Salat

This is an old time favourite dessert.It is called "Kueh Salat" or some called it "Seri Muka".It is a
kind of sweet dessert with glutinous rice at the bottom and pandan /screwpine leaves flavour at the top.If you add
salt,it has a sweet and salty taste.It depends whether you want to add some salt or not for the top layer,but for the bottom layer,you must add some salt to it to have a better and tastier taste.




This is an improved recipe taken from free recipes while shopping and alter a bit to suit my taste.
It is very very nice.Not too sweet and just the correct consistency that I wanted.


Ingredients for bottom layer:

300g glutinous rice
200ml coconut cream
1/2 tsp salt
3-4 pieces screwpine leaves/pandan

Ingredients for top layer(green):

80ml green juice extracted from 10 pieces screwpine leaves
200ml coconut milk
125g sugar
30g wheat flour
25g corn flour
3 eggs

Method:

1.Wash clean the glutinous rice and soak for 4 hours.

2.Drain away the water.Add in 200ml of coconut cream.You can also add 1tsp salt.Place 3 or 4 pieces of screwpine leaves for fragrant.Steam for 15 minutes.

3.Prepare the top layer while steaming the glutinous rice.

4.In a blender,blend the screwpine leaves with some water.Strain through a sieve and take out 80ml juice.

5.Mix all the top ingredients until well-combined.Sieve the batter to  a smooth paste.

6.Take out the rice from the steamer.Take away the leaves and puff up the rice.Press the rice firmly with a banana leaf in another lined pan.(leave out the banana leaf if you don't have one)but use the back of a spoon to smooth the surface.


7.Pour the sieved batter over the steamed glutinous rice.Steam for 1 hour over medium heat.

8.Wait till it is cold then cut it out diagonally or square shape.

Steamed Coffee Layered Cake

Since yesterday was Sunday,I was free to make one cake.That one cake was to have coffee flavour added inside.





....And as if adding coffee was not enough,i added in some oreo biscuits into two of the layers.You can always skip this step.It's optional.







Sometimes,If I'm lazy,I can have only two colours instead of using
more colours.This way,I don't have to wash up a lot of utensils and
plates.

Although you can use 3-in-1 coffee powder,it is however,advisable to use strong black coffee for a more coffee taste.If you really are a coffee lover of course!

Now,the ingredients needed:

450g anchor butter

180g caster sugar

220g Hong kong flour,sifted

10 eggs

1 small tin kaya(170g)

1 small tin condensed milk

4 tbsps strong coffee powder + i tbsp hot water to mix(or 2 pkts 3-in-1)

1 tbsp vanilla essence

a pinch of red,green colouring,yellow,brown/black



Method:

1..Beat butter and sugar until creamy.

2..Add in eggs one at a time,but preferably in alternate with condensed milk so that the mixture won't be so lumpy.(egg,then milk,then egg,then milk) until both are used up.

3.  Add in vanilla essence,follow by kaya and condensed milk.

4.  Then add in sifted flour.Mix well to combine.

5.  Divide mixture into 4 portions.Each portion add in desired colouring.

6.  Steam layer by layer over high heat,making sure each layer is set first               before adding in the next layer or colour.

7.  After the last layer,steam the cake a bit longer to properly cooked through.

8.  Take the cake out from the steamer to cool.Wait until it is properly cool,then
     cut to serve.

9.  The cake can be chilled in the fridge.

Basic Bread Machine Bread



When I think of no cholesterol bread,I go for the basic.One that is without animal fats.Just the basic of water,sugar,salt,veg oil,flour and yeast.

Combine all these together into the bread maker to make a healthy bread.No eggs,no milk and no butter.


Start with the liquid ingredients first into the bread pan of the bread machine.Choose basic or dough or soft and press start.The machine will do all the work.



Remember to take the blade out as soon as the machine stops working.This is to prevent the bread having large hole at the bottom of the bread.


Use your hand to press lightly the top of the dough evenly and smoothly so that your bread won't look like this:





Sometimes the bread machine don't do the bread nicely.We have to manually use our hands to do it.



I use medium loaf setting.It is ready in 3 hours.




I like to  toast my bread.

Ingredients:


1 cup warm water


3 tbsps sugar


1 1/2 tsp salt


3 tbsps veg oil


3 cups bread flour


2 1/4 tsp active dry yeast


Method:


Place liquid ingredients first into the bread pan,follow by the dry ingredients.Yeast comes last.


Press dough or basic according to your bread machine.Colour.Start.


When machine stop spinning,take out blade or you can just leave it inside but it will leave a big hole.


Leave the dough inside the machine.Smooth the surface for a better looking bread.


When the machine done baking the bread,cool on a wire rack.

Baked Cheesecake




Okay! Forget about about my ugly pictures.Think about a nice cheesecake for tea time.This cheesecake is super yummy and easy to make.Great snack with a cup of tea.

Found this recipe from an old book.

Ingredients:

Crust:

130g marie biscuits,crushed into crumbs

70g melted butter

Cheese Filling:

500g Cream cheese,at room temperature

60g castor sugar 

3 eggs,separated

75g nestle cream(coconut cream can also do)

30g plain flour,sifted

1 tsp vanilla essence

pinch of salt

Method:

Grease well 22 cm spring form cake pan.Mix biscuits crumbs with melted butter and spread on base of cake pan,pressing mixture down with the back of a wooden spoon.Refrigerate 
while you prepare the filling.

Put cream cheese,half the sugar,egg yolks,cream,flour and vanilla essence into an electric blender or mixer or food processor and blend until smooth and creamy.

In a clean bowl,whisk egg whites with salt for 2 minutes until fluffy,then add remaining sugar 
gradually and beat just until stiff.

Carefully mix cream cheese mixture with beaten egg whites and pour onto chilled crust.

Bake in pre-heated 160°C oven for 50 minutes or until cake mixture is quite firm.Turn off
oven and leave cheesecake to cool inside the oven with door ajar.

Chill in refrigerator for 2 hours or overnight.

Fried Radish-Yam Cake







I love this triangle-shaped kueh all through my childhood and adult years till now.One of my favourite local fritters.Some are shaped in square.


My children also love to eat this kueh.Whenever they see stalls selling,they will point at it
and ask to buy.




Ingredients:

150g radish-shredded

150g yam-shredded

30g dried prawns

1 clove garlic

Seasoning:

salt/sugar to taste

some dash of white pepper

oil


Batter:

1 cup rice flour

1/2 cup water plus 1 cup hot boiling water

Method For cooking:

1.Heat up 2 tbsps cooking oil.Fry the dried prawns and garlic.

2.Add in the radish and yam.Cook until softened.Dish up and set aside.

Method For The Batter:

1. In a bowl,mix rice flour with 1/2 cup of water.Add the seasonings in.Stir to a smooth 
    paste.

2.In a pot of hot boiling water,pour the flour batter in to mix until it thickens.

3.Now,mix the batter to the radish and yam.Mix well.

4.Brush baking tray with some oil.Pour the mixture in spreading with the back of a spoon.

5.Steam in the wok of boiling water at medium heat for 20 minutes until cook.

6.Take out and leave to cool.When it is already cooled,cut into triangle or square shape.

7.If you want to dip-fried,pour enough oil into the wok so that you can dip-fried the batter.

8.For not so crispy type,just use a few tablespoons of oil in a non-stick pan and fry the batter
   until it turns brown,turning on both sides.
    

If you only fry it with little oil,it will become like the picture above.

Honey Ginger Drink

Try this ginger with honey drink.Drink it either hot or cold.
You can also go with cinnamon stick-that is,honey,ginger and cinnamon if you don't mind the taste of the cinnamon 
which is I don't like.I only go for honey and ginger.Honey acts as a sweetener to the ginger which in turn taste nice and palatable.

Honey and ginger has some health benefits.
Google up and you will know.I'm not going to talk long over a recipe post.

Instructions:

Place the ginger in a cup,(a few slices about 4).If cinnamon stick is use,add it together with the ginger.

Pour hot boiling water full into the cup.Let it sit for 15 minutes.Then add in honey to taste,1-2 tablespoon.

Add some ice cubes if prefer to drink cold.

How To Make Roselle Drink



This is roselle drinks.Last week I went to the night market and this red,beautiful fruits caught my attention.I then ask the woman selling this to confirm whether this is roselle and she said yes.I was told by the woman that it can be made into juice and jam and many other uses.

I've ever heard of roselle but don't know much about it except that it can be made into drinks and a relative of mine had once grown plenty at her backyard.
Happily,I bought the roselle back and immediately went to the kitchen to cook.The woman told me to de-seed first,that is take the seed out from the red calyx and boil only the calyx with a pot of water and add in some sugar for sweetness and taste.

Ingredients:

25 roselle(calyx)

1400 ml of water

5 tbsps castor sugar

Instructions:

1.After deseed,boil the calyces(roselle) in a pot of water.

2.Add in sugar and continue boiling for 30 minutes.The water will turned red.

3.Leave to cool and chilled in the fridge.After chilling,the drinks will taste nicer.




Ermm......It taste like ribena.

Baked Kuih Bingka Ubi kayu/Tapioca Cake/Cassava Cake





Everyone said this is the easiest local cake to do and I had to agree more. It's all mix and bake.
The hard skin are peel off,washed clean of any dirt,then using a grater to grate,then when 
the grating is done,mix all the ingredients in a big bowl,place on a baking pan, and bring to the oven
to bake.there is also a steamed version to this cake.Both are very nice.


Ingredients:

520g tapioca,grated

170g coarse sugar

120g thick coconut milk

1 egg

50g melted butter

1/2 tsp salt

Method:

1. Peel the tapioca skin off.Wash the tapioca clean removing any dirt.

2.  Grate the tapioca using a grater.

3. Mix all the ingredients in a mixing bowl until well-combined.

4. Pour into the greased  baking loaf or lined with a banana leaf brush with oil.

5. Bake in the pre-heated oven top and low heat at 190°C for 45-50 minutes until brown and cooked.

6. Leave to cool then cut to pieces and eat warm preferable with hot tea.
