Everyone said this is the easiest local cake to do and I had to agree more. It's all mix and bake.
The hard skin are peel off, washed clean of any dirt, then using a grater to grate, then when
the grating is done, mix all the ingredients in a big bowl, place on a baking pan, and bring to the oven
to bake.there is also a steamed version to this cake. Both are very nice.
Ingredients:
520g tapioca,grated
170g coarse sugar
120g thick coconut milk
1 egg
50g melted butter
1/2 tsp salt
Method:
1. Peel the tapioca skin off.Wash the tapioca clean removing any dirt.
2. Grate the tapioca using a grater.
3. Mix all the ingredients in a mixing bowl until well-combined.
4. Pour into the greased baking loaf or lined with a banana leaf brush with oil.
5. Bake in the pre-heated oven top and low heat at 190°C for 45-50 minutes until brown and cooked.
