LEK TAU SUAN

 






This is one of our favorite desserts in the olden times. It is not hard to cook. It is very easy and simple. The peas need to be soaked first so that it can be soft very easily and quickier. The cooking time will also be shortened.

Most people will say this is a breakfast snack, but for me and my family will be an afternoon snack because we are freer in the afternoon than in the morning. By all means, this dessert or snack can be for morning, afternoon, and evening or even late-night supper. It always goes well with Yew Cha Kwai(breadstick).


INGREDIENTS;

300 g green peas without skin/ yellow peas

3 yew cha kwai

3 pandan leaves knotted

200 g sugar(50g more if you want it to be sweeter)

2 liters water

2 -3 tbsps potato or tapioca starch + 1/2 cup of water to mix


METHOD;

1.  Wash and soak the yellow peas for about 2-3 hours. Drain the water. Put on steaming tray and steam  

     on high heat until soft.

2.  Put sugar, water, and pandan leaves in a big pot and bring to the stove to boil until sugar has dissolved.

3.  Lower the heat and add in the yellow peas, followed by the potato or tapioca starch liquid.

4. Serve hot immediately after cooking and sprinkle some Yew Cha Kwai on top. It is nicer this way but do take care not to burn your tongue. The Yew Cha Kwai will soften in the hot desert.

GRILLED AGAR-AGAR

  AGAR AGAR BAKAR




Today I'm grilling what seems like Kek Lapis, but in actual fact, it is Agar Agar Lapis. The process is grilled layer by layer similar to Kek lapis or layered Cake. Since there is butter and eggs added, it tasted almost like cake and you can also taste the agar agar.
I got this recipe copy down from a cookery book long time ago. This recipe has been left sitting on the shelf for about twenty years or so. In the past, I've copied many recipes but some are my
long-awaited lists or "Lists To Do". 
This layered agar agar is very easy to make and not hard at all. I cannot believe that I just do it only now, but that is my list for this week and my list goes on and on every week, sometimes twice a week, from baking to cooking.



Preheat the oven to 180°C. Use top heat only throughout.

INGREDIENT;

8 eggs

160 g sugar

Beat eggs and sugar until became thick


15 g agar agar powder

250 g butter

1/2 tin sweetened condensed milk

1/2 tsp vanilla essence

400 ml water


METHOD;

1.  Cook agar agar with the sugar. When agar agar boils, add in the butter and sweetened condensed

    milk. Let the butter melt in the hot liquid. Then add in the vanilla essence.

2.  When the agar agar has cooled down a bit, add in the previously beaten eggs and sugar. 

3.  Set the oven to top heat only. Take 1 ladle of the mixture into the baking tray and grill the first layer.

4.  When the first layer has turned brown, grill the second layer and so forth till all are used up.

     The process is like grilling Kek Lapis or layered Cake. You can also use coloring if you want your agar agar to look nice.

Milo OreoJelly Pudding

 




Today my daughter made this jelly and is called "Milo Oreo Jelly Pudding".It was a hit and there was
no leftover.I had to admit that she made a very nice and cool jelly pudding for us.It look like an ice-cream,but it's not. The base has oreo biscuits in it,just like cheesecakes,Enjoy!


INGREDIENTS;

1 kg milk/1 packet

10 g red colour jelly powder

100 g sugar

a pinch of salt

1 tbsp corn starch

10 tbsps milo

1 small bottle chocolate chips/50 g chocolate

 1 pkt Oreo for base- leave some crushed oreo for the jelly later

4 tbsps  margarine

METHOD;

Put the oreo biscuits into a zipper bag.Use rolling pin to crush the biscuits finely..You can also use a food processor to do this.

Add the melted butter to the now like sand biscuits.Mix well and pour into a bread tin.Use the back of a spoon to lightly press and smooth the surface. Put it into the fridge to chill.

Mix jelly powder, corn starch,salt and sugar  in a saucepan or pot.Add in the milk slowly while stirring 

constantly. Bring it to a boil under low heat and take care not to get burn.Keep stirring and stirring until 

it boils and jelly has dissolved as well as sugar. Turn off the heat.Divide the jelly into 2 portions.

Pour one portion into the oreo base. The other portions add in milo and chocolate chips.Stir and

mix it well.

After the first portion has cooled down,chill it in the fridge to get firm but not so firm or hard.Then

pour in the second portion or layer.That is the milo layer.Again, wait until it gets cooled,then

put it in the fridge to chill for several hours or preferably overnight. Cut to eat.

NOTE: The second portion(milo) must be kept warm so that it won't get set.

Bubur Cha Cha




My Bubur Cha Cha don't t have to be so colourful with having to buy many types of colours for the  yam and sweet potatoes.
If I can only find one colour is enough as long as there is a yam and a sweet potatoes to make the dessert which is one of my favourite.It is still a Bubur Cha Cha anyway!
Some folks preferred to boil Bubur cha Cha in a more simple way by putting everything in to boil without having so much fuss as to steam the yam and sweet potatoes first and having to cook the sago and straining.Once the water is boiling,the sago are then added in followed by the sugar and when the yam and sweet potatoes has softened,santan are added last.Simple!Simple!.We only have to take care not to overcooked the yam and sweet potatoes or they will break and not looking nice.


Ingredients:

1  yam,abt 270 grams,wash and dice into cubes

 1  sweet potatoes,abt 260 grams,wash and dice into cubes

40 grams sago

80 grams tapioca flour

50 ml hot water

food colouring

200 grams sugar

200 grams coconut santan/milk

3 pandan leaves

1 litre water

Method:

Make tapioca jelly by mixing the hot boiling water into the tapioca flour and quickly stir to form a dough.Divide  the dough into two or three portions and put desired colours into each.Cut into small cubes.
In the pan of boiling water,throw the tapioca cubes in to make the jellies.Boil until cooked through or translucent.Transfer into a bowl of cold water.This is just to prevent sticking together.

Steam the yam and sweet potatoes in a steamer or wok till softened but not too soft so that it will breaks.

Next,cooked the sago:
Boiled water enough to cover the sago.When boiled,throw the sago in to cook until translucent.
Put the cooked sago into the sieve to remove water.then,put into a bowl of cold water.

In a medium pot,add in 1.5 litre of water and add in the sugar to boil.Also add in the coconut santan and knotted pandan leaves for fragrant.

Lastly,add in everything.(throw away the sago and jelly water first before adding it in.)

Serve.

Flower Pot Ice-Cream

This is what everyone is crazy about nowadays.Have you ever heard of an ice-cream in a flower pot?Well,I have.What's inside the flower pot are cake as the base,an ice-cream in the middle and using crush Oreo biscuits to make it look like soil,and not to mention the artificial flower.I think the artificial flower looks weird on an ice-cream and not edible.Here,I replaced it using gummy candies.You can put an artificial flowers if you like.It's fun and looked more real.But,I am doing it for business and sometimes I do it this way:for children to buy,I used gummy candies,and for adults,I used an artificial flowers.Now,isn't that sounds good?
Here's what you gonna used to make a flower pot ice-cream:

a small round cake
1 big scoop of ice-cream,flattened
plenty of crushed Oreo biscuits
gummy candies or artificial flowers
Straw/tooth-picks
flower pot
gummy worms(optional)

How to do:
Put the round cake into the bottom of a plastic pot.You can either buy packets of ready made round cake,or baked it yourself cakes and cut it into small round shape enough to fit inside the flower pot.but you must first wash the flower pot very clean.Next,put the ice-cream into another clean bowl and try to flatten it a bit so that it can cover the whole pot and not leave a
 hole on sides.Then,you put the ice-cream in.Put on the artificial flower using straw or
tooth picks for gummy candies.Lastly,soiled the whole pot with crushed Oreo biscuits and put 2 gummy worms on top of the fake soil.
There,you've planted your pot of flowers.Nice try!

Ice kachang/ABC Special



This feeling is so good!ABC special on a hot,sunny day.This specialty dessert is very popular in Malaysia and Singapore.I made this at home last Saturday and Sunday,along with my daughter.
What we 'd added:cincau,red beans,sweet corn,cincaluk,cocktail,agar-agar and tiny small pearls.We then used a big commercial blender to blend the ice cubes.We don't have an ice shaver machine at home,but we are planning to buy one soon.Evaporated milk,gula apong,sugar syrup and cherry cordial were added to the top.We made the perfect ais kachang that day.It was very cooling.My daughter was very happy that she can make her own ABC Special at home.

I can't make an exact recipe for this one.You can add anything you want.You can also shave the ice and make it tall like a mountain.For us here,we put 1 tablespoon each for everything.
Here are the things that we bought and used:





Oh!I forgot to mention one thing.It's not in the picture.It's the pearl sago.


Put this according to how sweet you want,but not too sweet


Last of all,add in gula melaka or gula apong or brown sugar in and you are on your way to a tasty ice kachang.Instead of evaporated milk,coconut santan is a substitute.It is more tastier,more fragrance.
