FENG CUI PING-MOONCAKES




Now I can proudly presents you my Hong Choi Pia.Wow! After so many years I finally found the
recipe.Thanks to my daughter who help me to google search in chinese.I had a hard time finding for this recipe as I found that no one has posted out this recipe but yes,there's at least 3-4 bloggers who did posted it online.Typing in english or pinyin for the words "Feng Cui Ping",or "Hong Choi Pia" didn't help in my search,but typing in chinese,she easily found the recipe,so I happily make
for the first time and with success except it was too thick and a bit too sweet.


This was way too thick.(above pic)The taste is not wrong.


Today I try to make another batch with the same recipe but I lessen the sugar by 40g.I also made it much thinner than the first batch,that was only yesterday.Yesterday,I only yield 4 pieces of pancakes,but today I can yield to 8 pieces because I made it smaller and thinner,hence can get 8 pieces.


Makes 4 small and 4 big pieces.


It may still look like it is too thick,but in actual fact,it is not so.This is the standard size.



By the way,when you stored bought this pancake mooncakes,it is written as 5-spice mooncake on the packaging.Therefore,I've added some 5-spice powder to it.

I refer to all the above mention websites.They are all very similar.

First,I make the dough ready,then I began crystallizing the sugar for the filling,and the final stage is the wrapping,rolling and pan frying the pancakes.The glutinous rice flour have to be cooked too before adding in.

I do not wish to write a long post but jump to recipes:

THE SKIN;

300 G plain flour
100 G vegetable shortening
100 G hot water
1 big tbsps icing sugar
1 big tbsps maltose

In a big mixing bowl,add veg shortening,plain flour,maltose,icing sugar and hot water.Slightly mix
using a tablespoon.Knead until it form a soft dough and set aside for later use.

CRYSTALLIZED SUGAR;

260 G caster sugar
60 G water

In a cooking pot or saucepan,add in the sugar and the water.Stir and melt the sugar to crystallized.

THE FILLING;

1 tbsp+ orange zest from 1 orange
75 G cooked glutinous rice flour(fried)
150 G plain flour
100 G roasted sesame seeds(white or black seeds mixed will also do)
1 tbsp maltose
1/3 tsp 5 spice powder(optional)
Crystallalized sugar

In a bowl,mix the crystallized sugar and maltose together.Add 40g of water and let it slightly dissolved.

In another mixing bowl,mix flour,cooked glutinous rice flour,5 spice powder,roasted sesame seeds and orange zest.

Make a hole in the center and pour in the liquid mixture and mix until smooth.Divide into 8 balls.

Divide the dough to 8 balls as same with the fillings.  Flatten the dough and wrap the fillings in with the dough.Using rolling pin,roll each balls into a round shape.

Pan fry the pancakes under low fire on both sides until cooked and brown in colour.

Apam Balik With Three Fillings Of My Choice

This is my new apam balik recipe.Translated in english is turnover pancake.I have peanut,cheese and chicken floss as the fillings.


Tonight I'm so free as to make these pancakes.I wanted to finish up my milk that is left opened in the fridge as quickly as possible.That's a melon milk.Use a white milk if you have and preferably low fat.I much much prefer the original taste of milk instead of the melon taste.



.......but the pancake is still nice....and nice to eat when it is still warm.


I ate until my stomach is very full and eat nothing else for dinner.



My this newly bought non-stick pan bought from Mr.DIY shop makes a very nice pancakes.



Ingredients:

31/2 cups all purpose flour
1 egg
1 cup sugar
3 cups fresh milk
3/4 tbsp baking soda
3/4 tbsp baking powder

Fillings:

Pounded peanuts
Shredded cheddar cheese
Chicken floss
Butter

1. Whisk egg,milk and sugar until sugar is dissolved.

2.Add in the flour,baking powder and baking soda to mix until smooth and lumpy.

3.Leave the batter  on the table cover for 2-3 hours before cooking.(but I couldn't wait and I began cooking a few pieces to eat and it still turned out alright).

4.Lightly butter a small non-stick pan with paper napkin.When it's hot,pour half cup batter into the pan and spread evenly round with the back of a ladle.

5.When the pancake has holes coming out,use your fingers to sprinkle grounded peanuts,shredded cheese or chicken floss on top.(according to your choice of likes)

6.Wait till the pancake has set and turned brown,then fold into half.Cut into two pieces.
It is best eaten when it is still warm.

Spring Onion Pancake



Here is my latest sharing:flour pancake with spring onions from my garden and egg fillings.
A "Breakfast for two"






And now here is a quick shared recipe:

1 cup water
120g flour
2 tbsp sugar
a bit of salt
2 stalks spring onions,cut to small pieces
eggs

Method:

Stir sugar with water until dissolved.Put in the flour and spring onions and mix well together.
Heat up the wok.Put 1 tbsp oil.Using a 1/3 cup,scoop up the batter and make into a pancake,swirling the wok one whole circle to make it wide and thin.Use low fire.Crack one egg in.When egg started to cooked a little,fold the pancake like an envelope shape.Then turn it over to the other side for just a few more minutes to let the egg properly cooked inside.Take it out.Do the same for the next one.Use fork and knife to cut and serve.

Pancakes



At last,I made pancakes.I've always wanted to make but I don't have the non-stick pan.I decided to go buy a new one with a fairly discounted price.Okay!so here I am,making pancakes,standing hot in the kitchen.I made eleven pancakes.Hmmm...the pancakes results were soft and fluffy.My son drizzle honey on top of it.I decided to put some peanut butter and make it look like dorayaki,the japanese pancakes,but too bad,my peanut butter had finished.Eat plain then.



Ingredients to follow:

240g self-raising flour

1 tablespoons baking powder

90g castor sugar

235ml evaporated milk

2 eggs

Methods:

Whisk the milk and eggs together with a mixer.Add in sifted flour and sugar,Add in the baking powder.If it's too dry,add in another 10ml of milk.Whisk again.Leave for one hour first.After one hour,mix the batter well.
Take out the non-stick pan.Wrap a little bit of butter in paper napkins and wipe the pan.Scoop up one-third batter and drop into the center of the non-stick pan.Flap over to the other side when bubbles forms.Serve warm with honey.
