claypot tofu

Claypot Tofu
Today,I learned how to cook this simple meal.
Ingredients:
3 japanese tofu (sliced diagonally)
A)
5 young corns
1/2 carrot(sliced thinly)
4 florets cauliflower
4 florets brocoli
3 dry mushrooms(soaked)

2 slice of thin ginger
1 clove garlic

2 tbspoon corn flour + 1 tbsp water mix

1/4 cup water
B)
1 tsp plum sauce
1 tbsp salt
1 tsp maggi seasoning

Method:
Deep-fry the tofu until brown.Take it out from the kuali.Set aside.
Fry the garlic and ginger in a claypot until fragrant. Pour the water in.
Add in (A)Stir.Add in the tofu.
Next add in (B)
When cooked,add in the corn flour.Stir and dish it out. Enjoy!

Note: I cooked this according to my taste.You can cook your own taste.

thieves break-in

26th August,2013,Monday- Thieves broke into my home and stole 2 laptops,1 netbook and an ipad..My wedding ring was also stolen along with my family passports and bankbooks.They even took away a windows 7 softwares.Anger suppressing me.My most valuable item was my wedding rings.How unlucky indeed!I kept getting unlucky these days.One of the laptop,belong to my nephew.His laptop was under repaired at my home at that time.Luckily,his was easily replaced by his own father,but not for us.There are many more things that they took and who knows there are some more which I haven't found out yet.Thieves are getting smarter these days.They even robbed in the day time.Mine happened in the night.We don't have any security alarms or CCTV.I just wish I had a dog,a very fierce one.The television was on at that time,when we went out but the thieves still knew that nobody was at home.So,how did the thieves know that there's nobody at home?They must have spy on us.Luckily,no one was at home at that time or else they might have harm us.We all went out for a birthday party with my niece.
Now,everyday,I'm in fear.I couldn't sleep peacefully!Therefore,I felt very sleepy everyday..
I just can't own anything.Not even up to two months!I doze off too while trying to edit my blog!

Red Yeast Rice Chicken

1.5 kg chicken
a small piece of ginger(extract juice)
1 small garlic
1 tablespoon light soya sauce
1 tablespoon salt
2 tablespoon rice wine
4 tablespoon red yeast rice
3 tablespoon cooking oil/sesame oil

Heat up oil in a wok.Put the garlic in till fragrant.
Throw the red rice yeast in and the chicken.
Pour the light soya sauce,salt and ginger juice in.Stir .Cover.
Lastly, pour the rice wine in.cover again for a few more minutes until done.
Serve warm with rice.
Note:I don't know how other people cook it,but I cooked it this way.I'm not a Foochow.I heard that this is a Foochow dish. One way or the other,it is still delicious.

Basic Angel Cake

Finally,I made an angel cake.With so many egg whites left from making kek lapis the other day,I had to think of what to do before I threw it into the bin and waste away.I found a recipe and made this simple basic angel cake.Adapted from the book-1001 Classic Recipes From around The World
Actually,this cake was supposed to use a tube pan but I don't have one,so I just used a 9" round pan instead.




 Basic Angel Cake:
1 cup all purpose flour
2 tbsp cornstarch
11/2 cups superfine sugar
10 large egg whites
11/4 tsp cream of tartar
1/4 tsp salt
1 tsp vanilla extract
1/4 tsp almond extract
confectioner's sugar to dust(I skipped)

Preheat oven to 325°F.Set out a 10 inch tube pan with a removable bottom.Sift the flour and cornstarch into a large bowl.Stir in 1/2 cup superfine sugar.Beat the egg whites,cream of tartar and salt in a large bowl with an electric mixer at medium speed until frothy.With mixer at high speed,gradually beat in the remaining 1 cup sugar,beating until stiff peaks form.Add the vanilla and almond extracts.Use a large rubber spatula to gradually fold in the dry ingredients.

Orange Layer Cake

I kept eating this cake.It was a little sweet/Perhaps I should less the condensed milk or sugar next time.My husband kept eating this too.It was nice!nice! and yum!yam!,but look at the egg yolks.Health conscious people are advised not to eat this a lot.



Ingredients:

A) 350g butter,60g castor sugar
     1/2 can sweetened condensed milk(194g)
     1/2 can kaya(150g)

B) 18 egg yolks,1 tbsp cake emulsifier(ovalette)

C)  140g Hong Kong flour/superfine flour

D)  3 tbsps orange jam, 1 tsp orange essence
      1 tsp orange colouring

Method:

1.Beat ingredients (A) till light and fluffy.

2.In a separate bowl,beat ingredient (B) till creamy.

3.Fold no.(1) and no.(2) together.

4.Mix in ingredients (C) and divide cake mixture into two portions.To the first portion,add in      ingredient(D) and let the second portion natural.

5.Grease and line an 8 inches square baking tin.Scoop 1 ladle of orange coloured cake mixture into cake tin.Level it and bake in a preheated oven at 180 degree celcius on the upper shelf.Check before five minutes is up for the first few layers as different ovens have different heat.Remove whole cake tin.

6.Place a piece of parchment paper on top of baked surface.Use a metal flattener ,press surface all over to remove trapped air bubbles.

7.Scoop in one ladle of uncoloured cake mixture,level it and bake for about 5 minutes.

8.Continue to alternate the two mixtures till ingredients are used up.


Instead of metal flattener ,I used the base of a flat glass.

My husband is expanding our back kitchen.It will take some time to finished because he is doing the work all by himself.No hurry cos we still got a dry kitchen.While he is busy with the renovation,I ,on the other hand is cooking for dinner.

It was a lazy Sunday evening,but I cooked my dinner well!

Floor lamp

DIY Floor Lamp




Ooh!I can never stop doing something.I can never let myself be free.I just cannot just sit down and doing nothing.I'll get bored to death,and then what?I'll get stress,stress,stress..My life just keeps going.
One free afternoon,as I had already finished cleaning my room,I made this wooden floor lamp.It was made from an old planks taken out from an unused old Tv cabinet.I've kept it for months in my room,not wanting to waste it away.I tried to figure out of what to make later.
So,for this one,I try imitating the Japanese floor lamp.My husband helped me with the wired things and bulb.It was very bright.I think I'll have to change the bulb lighter soon.It hurt my eyes.

YOGURT MARBLE CUPCAKE




I have made this cupcake similar to the lazychef blog but not as beautiful as her one.Mine has no coffee granules added cos I hated coffee.It made me headache just by smelling it.I just used margarine instead of unsalted butter.I added a few more grams of cocoa powder to made it more chocolately.I didn't made it in a zig-zag way as said in the blog.The results were more milky-like.

Ingredients:(A)
85g margarine
170g sugar
1tbsps vanilla

Ingredients:(B)
45g cocoa powder
70g sugar
60ml water

2 eggs beaten

Ingredients:(C)
sift together 225g plain flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

1 cup low fat mango flavour yogurt

Method:
1.Beat in ingredients (A) till creamy.Add in the beaten eggs slowly at a time.
2.With mixer at low speed,beat in ingredients(C) till well combined.
3.Add in the yogurt.Mix well.Divide the mixture into half each.Add ingredients(B) to one half and    leave the other half plain.
4.Line the patty tin with paper cups.
5.Spoon 1 tbsp of cocoa mixture on the base.Spoon 1 tbsp of plain mixture on top of the chocolate mixture.Spoon another cocoa mixture on top of the plain mixture and repeat till all alternate layers are used up.
6.Bake in a preheated oven at 180 degree celcius for 25 minutes.

Milo Jelly

Milo Jelly
You don't know how good this one is.Only with the taste of Milo.If you love Milo,you would love this Jelly that I've made:

750ml water
100g castor sugar
2 tbsps jelly powder
5 full tbsps Milo+1/4 cup boiling water

1.Stir the milo with the hot water until dissolved well.
2.Put all ingredients in a pan and bring to boil stirring continously under low fire until the jelly
   powder are dissolved.
3.Turn off the fire.Cool the jelly before chilling for several hours.

The weather is so hot out there. This comes perfect for the day.I would love to make fanciful agar-agar or jellies but my time is very limited.

Sponge Cake top with Jelly

I'm supposed to make a three-layer jelly cake,but I ended  out making this one.For days,I I kept thinking of making a sponge cake at the bottom and two layers of jelly in the middle and top but I don't know why in the end I made only a sponge cake top with a thin piece of jelly only.Sigh!
(any brand sponge cake mix will do, just follow the box instructions)

Recipe:
500g ready-mix Soon Huat moh sponge flour mix(before baking,take half the cake mixture only)
7 eggs(at room temperature)
100g water

Using an electric mixer,mix together the above ingredients and beat at highest speed  for 45 minutes until frothy.Bake in the oven at 180ºC until done.Cool the cake.

Bake the rest of the cake mixture.(I make 2 set to give 1 set to my relative)

To make the jelly:
A.500ml evaporated milk
    100g sugar
    1/4 tsp salt
    1tablespoon jelly powder

B.200ml water
    2 pandan leaves,knotted
    50g Hoen Kwee green pea flour
    1 teaspoon pandan paste

Method:
1.Boil ingredients(A) till jelly powder is sissolved.
2.Add in ingredients(B).Discard the pandan leaves.
3.Put the green pandan paste in and stir until well- mix.Quickly pour half the jelly on top of the
   sponge cake.Let it cool and refrigerate.

This is how I made my Jelly Sponge Cake.The three layers will have to wait someday when I am free again.

Black pepper Chicken Chop

First time making DIY black pepper chicken chop at home.The chicken need to be pounded first to make it more tender and juicer.What could be more happier than to have your own western food cooked at home all by yourself.Thumbs up for me!

2 boneless chicken

For marinating
1 tbsp worchester shire sauce
1 tbsp oyster sauce
some dash of pepper
a dash of salt

 add on sides:
3-4 potato wedges or french fries
brocoli
cauliflower

The sauce:
1 cup water
40g aji-shio blackpepper powder

1.Marinate the chicken over night.
2.Grill the chicken in oven or iron grill
3.Cook the sauce.Heat 2 tsp oil with garlic and onion.Pour water in.Put the aji-shio ready sauce in and stir till thick.
4.Pour over the grill chicken.Serve with brocoli,cauliflower or carrot ,mashpotatoes or french fries.(whatever your choice)

A Belated birthday

Oh!Oh!My neice mistaken her own birthday to another date and had to celebrate it five days late.I rushed to book seats in a nearby western cafe and rushed to buy her a cake.Luckily,I found one that suits her.All in all,it was a Belated Birthday dinner.

Unfortunately,her mom and dad are too busy to remember their  daughter's birthday.How Sad!
